My Tuscan Chicken Recipe
I arrived on a train from Rome to the quaint town of Barga in Tuscany and looked around the train station. There were no taxis or people— in fact, there weren’t even any cars driving by. The train station officer helped me call a taxi which told me it would be a 45 minute wait. I looked across the street to see a dilapidated mom-and-pop restaurant with plastic chairs and tables outside.
My mom and I set down our luggage, got cozy on the plastic furniture, and surprisingly ordered one of the best meals I’ve ever had in my life. The shining star of the meal was a simple roasted chicken swimming in generous puddles of olive oil and Tuscan herbs, garnished with fresh lemons. As soon as I got home I created my own version of the dish which I’ve now been cooking for years, and I’m excited to finally be able to share it with you!
